I am thinking the title could be the job opening, then body could be the description. Is there a way for me to add more standard fields such as location, start/end dates, and an apply button to bring up a form?

you should be able to extend the plugin as you would any other per this nice video tutorial. I think Problog would be a nice head start for you for sure.
